Banana Date Walnut Loaf

Ingredients

  • 9 medjool dates, pitted
  • 3 very ripe medium bananas
  • 3 batches of flax egg (3tbsp flax meal & 7 1/2 tbsp water)
  • 3/4 cup spelt flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 30g walnuts, chopped
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • 1 tbsp maple syrup
  • Pinch of salt

Preparation

  1. Preheat the oven to 180C and line a loaf tin

  2. Prepare flax egg in a little bowl and leave to one side

  3. Chop up 3 dates into little chunks and put aside, then simmer the rest in hot water for about 5 minutes, drain, and use a blender to combine them with the bananas

  4. In a bowl mix flour, baking soda and powder, add flax egg, stir briefly, then add the banana date mixture, stir until just combined, then fold in the chopped walnuts and dates, pour into baking tin and bake for about 40 minutes or until a toothpick comes out clean

  5. Enjoy with lashing of peanut or almond butter
