Petit Fours with Oat Flour and Ganache
Ingredients
- 2 1/2 cups oat flour
- 3/4 cup rolled oats
- 2 tbsp coconut sugar
- 2 1/2 tbsp coconut oil (melted)
- 1 1/2 tsp vanilla extract
- 1/2 cup maple syrup
- A pinch of salt
Chocolate ganache
- A big slab of 85% dark chocolate
- A few dollops of coconut cream
Preparation
Preheat your oven to 180 °C.
In a large bowl, add all the ingredients, stir well, and knead it.
Roll the cookie dough into a ball, then flatten it with a rolling pin to approximately 4 mm thick.
Use a cookie cutter to make eighteen disks, and cut out stars using a miniature cutter on nine of them.
Place the cookies on a tray lined with grease-free paper.
Bake them in the oven until the cookies turn golden.
Prepare the chocolate ganache by melting the dark chocolate and stirring in the coconut cream until smooth
Set them aside to cool and then fill them with chocolate ganache.
