Vegan Apple and Goji Berry Pie

Ingredients

Crust

  • 1 1/3 cups oat flour (160g)
  • 3 tbsp coconut sugar (45g)
  • 1/4 cup coconut oil (45g)
  • 2 tbsp apple puree
  • 1/4 tsp cinnamon
  • 1/4 tsp salt

Filling

  • 3-4 apples (400g)
  • 1/2 cup goji berries (60g)
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup or honey if not vegan

Crumble topping

  • 1/2 cup rolled oats (45g)
  • 1/4 cup oat flour (60g)
  • 1/4 cup coconut sugar
  • 2 tbsp coconut oil
  • 2 tbsp apple puree
  • 1/8 tsp salt

Preparation

  1. Preheat oven to 175 C / 350 F and line the bottom of an 8-inch tart pan.

  2. In a food processor or mixing bowl, combine all dry crust ingredients, then add in the wet ingredients to form a dough. Press into the prepared pan, and bake 12-15 minutes or until golden brown.

  3. Toss all filling ingredients in a bowl, then spread evenly over the baked crust.

  4. Combine all crumble ingredients. Sprinkle the crumble evenly over the apples until it is all covered. Bake 50-60 minutes, or until the crumble is golden. Let cool 20 minutes before removing the springform.
