Vegan Sweet Potato Casserole

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup coconut milk
  • 2 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup pecans, chopped
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons coconut sugar

Preparation

  1. Preheat oven to 350°F (175°C).

  2. Boil sweet potatoes until soft, then drain and mash.

  3. Mix mashed sweet potatoes with coconut milk, maple syrup, cinnamon, nutmeg, and salt.

  4. Combine chopped pecans, melted coconut oil, and coconut sugar in a separate bowl for topping.

  5. Spread sweet potato mixture in a baking dish and sprinkle pecan topping over it.

  6. Bake for 20-25 minutes until topping is browned and mixture is bubbly.
