Vegan Sweet Potato Casserole

Ingredients

  • 3 cups chopped sweet potatoes (about 3 sweet potatoes)
  • 2 tbsp coconut sugar
  • 2 tbsp melted coconut oil
  • 1/4 cup almond milk
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 cup pecans
  • 1/4 cup almond flour
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon

Preparation

  1. Heat a medium pot of boiling water.

  2. Peel and cube the sweet potatoes.

  3. Boil the sweet potatoes for about 15 minutes, until they are completely soft.

  4. In a bowl, mash the sweet potatoes.

  5. Add the coconut sugar, melted coconut oil, almond milk, cinnamon, vanilla, and salt to the mashed sweet potatoes. Mix together well.

  6. Grease a small casserole dish and add the sweet potato mixture to it.

  7. In a food processor, pulse together the pecans, almond flour, coconut sugar, and cinnamon for the topping.

  8. Sprinkle the pecan topping over the sweet potato mixture. You can also add whole pecans for texture.

  9. Bake at 400°F (200°C) for 20 minutes.

  10. If desired, add marshmallows on top at the end and broil until they are toasted.
