Peanut Butter Cookies with Chocolate

Ingredients

  • 1/2 cup peanut butter, or allergy-friendly sub
  • 3/4 tsp baking soda
  • 3 tbsp flour (spelt, white, oat, sorghum, rice all work)
  • 1/3 cup sugar, unrefined if desired
  • 2 tbsp applesauce
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt

Preparation

  1. Preheat oven to 350°F

  2. Combine dry ingredients in a mixing bowl.

  3. If peanut butter is not stirable, gently warm to soften.

  4. Add all remaining ingredients to the mixing bowl and stir to form a dough.

  5. Roll into cookie balls.

  6. If you want soft cookies, refrigerate the dough at least one hour.

  7. Bake in the preheated oven for 8 minutes.

  8. Let cool for at least 10 minutes before removing from tray, as they firm up while cooling.

Chocolate dipping

  1. Melt chocolate and dip each cookie.

  2. Place them in the refrigerator for five minutes.

  3. Drizzle more chocolate across the entire cookie.
