Classic Vegan Chocolate Chip Cookies

Ingredients

  • 1 cup vegan margarine
  • 1 cup brown sugar, packed
  • 1 tsp vanilla extract
  • 2 flax eegs (2 tbsp ground flax seed mixed with 4 tbsp water, let sit for 5 mins)
  • 2 cup flour
  • 1 tsp baking soda
  • a pinch of salt
  • 1 cup dairy free chocolate chips

Preparation

  1. With a stand or hand mixer, whip together margarine, vanilla and sugar together until fluffy (about 3 mins)

  2. In a separate bowl, mix together flour, baking soda and salt

  3. Combine dry and wet ingredients together until dough forms

  4. Stir in chocolate chips

  5. Scoop drops of dough (about large 1 tbsp) onto parchment lined baking sheets and bake at 375 degree f for about 10 mins
