Classic Vegan Chocolate Chip Cookies
Ingredients
- 1 cup vegan margarine
- 1 cup brown sugar, packed
- 1 tsp vanilla extract
- 2 flax eegs (2 tbsp ground flax seed mixed with 4 tbsp water, let sit for 5 mins)
- 2 cup flour
- 1 tsp baking soda
- a pinch of salt
- 1 cup dairy free chocolate chips
Preparation
With a stand or hand mixer, whip together margarine, vanilla and sugar together until fluffy (about 3 mins)
In a separate bowl, mix together flour, baking soda and salt
Combine dry and wet ingredients together until dough forms
Stir in chocolate chips
Scoop drops of dough (about large 1 tbsp) onto parchment lined baking sheets and bake at 375 degree f for about 10 mins
