Vegan Gluten-Free Chocolate Chip Blondies

Ingredients

Dry

  • 1 1/4 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt

Wet

  • 1 flax egg (1 tablespoon ground flaxmeal plus 3 tablespoons water; refrigerate for 10-15 minutes to thicken)
  • 1/2 cup raw creamy almond butter
  • 1/4 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • Vegan chocolate chips

Preparation

  1. Prepare the flax egg by mixing 1 tablespoon ground flaxmeal with 3 tablespoons water and refrigerate for 10-15 minutes to thicken. Preheat the oven to 350°F.

  2. Mix the dry ingredients in a small bowl.

  3. Mix the wet ingredients in a medium bowl, then slowly combine the dry ingredients into the wet to make the batter.

  4. Stir in the chocolate chips.

  5. Pour the batter into an 8x8 pan and bake for 30-32 minutes.

  6. Cool down for at least 10 minutes before cutting into them.
