Vegan Grain-Free Paleo Blondie Bars
Ingredients
Dry mix
- 1 1/4 cups almond flour (Bob's Red Mill)
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
Wet mix
- 1 flax egg (1 tablespoon ground flaxmeal and 3 tablespoons water)
- 1/2 cup raw creamy almond butter
- 1/4 cup coconut oil, melted
- 3 tablespoons almond milk
- 1 teaspoon vanilla extract
- Vegan chocolate chips (Enjoy Life Foods)
Optional additions
- 1/4 to 1/2 cup coconut sugar (for sweeter version)
Preparation
Prepare the flax egg and preheat the oven to 350°F.
Mix the dry ingredients in a small bowl and the wet ingredients in a medium bowl, then slowly combine the dry into the wet to form the batter.
Transfer the batter to an 8x8 inch pan, add the vegan chocolate chips, and bake for 20 minutes. Allow to cool for at least 10 minutes before cutting.
