Oreo Chunk Cookies (Gluten Free & Vegan)

Ingredients

  • • 1 1/4 cup almond flour
  • • 1 tbsp coconut flour
  • • 1 tbsp cocoa powder
  • • 1 tsp baking soda
  • • 1/3 cup creamy cashew butter
  • • 1/3 cup pure maple syrup
  • • 1/4 cup coconut oil
  • • 1 flax egg
  • • 1 tsp vanilla
  • • pinch of salt
  • • 8 gluten free oreos broken up

Preparation

  1. Preheat oven 350F - line baking sheet with parchment paper

  2. Mix dry ingredients and wet ingredients separately and then bring together

  3. Fold in the oreos

  4. Scoop out about 10-12 cookies and bake for 15 minutes! ENJOY
