Gluten-Free Keto Chocolate Chip Banana Muffins
Ingredients
- 4 overly ripe bananas
- 1 teaspoon Madagascar Vanilla
- 1 egg
- 1/3 cup almond butter
- 1/4 cup granulated sweetener
- 1 tablespoon chia seeds
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- pinch of salt
- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon baking soda
- 3/4 cup keto chocolate chips
- 1/4 cup toasted pecans
- 1/4 cup cacao nibs
Preparation
Preheat oven to 350.
Combine first 6 ingredients with a mixer until well combined.
Fold in remaining ingredients.
Transfer to coconut oil coated muffin tin and top with extra chocolate chips.
Bake for 15 minutes.
