Gluten-Free Keto Chocolate Chip Banana Muffins

Ingredients

  • 4 overly ripe bananas
  • 1 teaspoon Madagascar Vanilla
  • 1 egg
  • 1/3 cup almond butter
  • 1/4 cup granulated sweetener
  • 1 tablespoon chia seeds
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • pinch of salt
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 3/4 cup keto chocolate chips
  • 1/4 cup toasted pecans
  • 1/4 cup cacao nibs

Preparation

  1. Preheat oven to 350.

  2. Combine first 6 ingredients with a mixer until well combined.

  3. Fold in remaining ingredients.

  4. Transfer to coconut oil coated muffin tin and top with extra chocolate chips.

  5. Bake for 15 minutes.
