Gluten Free Ginger Apple Crisp Cookie

Ingredients

  • 1 egg and 1 yolk
  • 1/3 cup melted coconut oil
  • 1.5 teaspoons vanilla
  • 1/2 cup granulated sweetener
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup almond flour
  • 2 cups gluten-free oats
  • 1/2 cup toasted chopped pecans
  • 1 finely chopped Granny Smith apple
  • 1 tablespoon fresh minced ginger

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine 1 egg and 1 yolk, 1/3 cup melted coconut oil, 1.5 teaspoons vanilla, and 1/2 cup granulated sweetener with a hand mixer until slightly fluffy.

  3. Add 1/2 teaspoon nutmeg, 1 teaspoon cinnamon, 1/2 teaspoon salt, 1 teaspoon baking powder, 3/4 cup almond flour, and 2 cups gluten-free oats. Mix until combined.

  4. Fold in 1/2 cup toasted chopped pecans, 1 finely chopped Granny Smith apple, and 1 tablespoon fresh minced ginger.

  5. Form into balls and place on cookie sheet, flattening slightly.

  6. Bake for 12-15 minutes.
