Gluten Free Ginger Apple Crisp Cookie
Ingredients
- 1 egg and 1 yolk
- 1/3 cup melted coconut oil
- 1.5 teaspoons vanilla
- 1/2 cup granulated sweetener
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 3/4 cup almond flour
- 2 cups gluten-free oats
- 1/2 cup toasted chopped pecans
- 1 finely chopped Granny Smith apple
- 1 tablespoon fresh minced ginger
Preparation
Preheat oven to 350 degrees Fahrenheit.
Combine 1 egg and 1 yolk, 1/3 cup melted coconut oil, 1.5 teaspoons vanilla, and 1/2 cup granulated sweetener with a hand mixer until slightly fluffy.
Add 1/2 teaspoon nutmeg, 1 teaspoon cinnamon, 1/2 teaspoon salt, 1 teaspoon baking powder, 3/4 cup almond flour, and 2 cups gluten-free oats. Mix until combined.
Fold in 1/2 cup toasted chopped pecans, 1 finely chopped Granny Smith apple, and 1 tablespoon fresh minced ginger.
Form into balls and place on cookie sheet, flattening slightly.
Bake for 12-15 minutes.
