Grain-Free Granola with Autumn Spices

Ingredients

  • 1 cup desiccated coconut
  • 1 cup walnuts
  • 1 1/2 cup pecans
  • 3 tbsp ground flax or hemp (I used @yumandyay_)
  • 3 tbsp coco flour
  • Large pinch salt
  • 1 tsp Cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 2.5 tbsp vegan butter or coco oil, melted
  • 2 tbsp Apple puree
  • 3 tbsp maple syrup @clarks_it - can add more if needed
  • 1 tsp vanilla
  • Dark choc chips (to serve)

Preparation

  1. Preheat the oven to 170C, then line a baking tray.

  2. In a blender pulse together the nuts and coconut until it breaks down - leave a few chunks for texture!

  3. Tip into a mixing bowl and stir in remaining ingredients (and more oil for a chunkier texture) until the mixture sticks together.

  4. Place on baking tray and bake for 13 minutes, then stir and lower oven to 150. Continue to cook for 9 mins, then turn off the oven, open the oven door and allow the granola to cool in the oven - this helps it to crisp up. Store in an airtight container and stir through choc chips once cool.
