Mini Banana Bread with Four Variations
Ingredients
- 3 eggs
- 2 mashed bananas
- 2 cups almond flour
- 2 tbsp coconut flour
- 2 tbsp unsweetened almond milk
- 2 tsp cinnamon
- 1 tsp vanilla
- 1/4 cup melted ghee
- 1 tsp baking powder
- Optional: 2 tbsp coconut sugar

Preparation
Preheat oven to 350°F.
In a bowl, whisk 3 eggs.
Add 2 mashed bananas, 2 cups almond flour, 2 tbsp coconut flour, 2 tbsp unsweetened almond milk, 2 tsp cinnamon, 1 tsp vanilla, 1/4 cup melted ghee, 1 tsp baking powder, and optional 2 tbsp coconut sugar, then mix well.
Grease the loaf pans.
Pour the batter into the pans for one regular loaf or four mini loaves.
Bake mini loaves for 30 minutes or a regular loaf for 35-40 minutes.
Optionally, top with blueberries, pecans, granola, or chocolate chunks before baking.
Tips
Add coconut sugar for extra sweetness if desired.
This recipe is paleo and gluten-free, making it a healthy option.
