Chocolate Pecan Oatmeal Cookies
Ingredients
- 1 1/2 cups gluten-free rolled oats
- 2/3 cup almond flour
- 3 tablespoons ground flax
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 3 tablespoons melted coconut oil
- 1/2 cup plain almond butter
- 1/4 cup coconut sugar
- 1/4 cup date syrup or maple syrup or agave
- 1 tablespoon vanilla extract
- 1/4 cup hemp seeds
- 1 tablespoon cacao nibs
- 1/2 cup toasted pecans
- 1/2 cup keto chocolate chips
Preparation
Preheat oven to 350 degrees Fahrenheit.
Combine the first six dry ingredients in a mixing bowl. Stir in all wet ingredients using a spoon or hand mixer to make a dough.
Fold in hemp seeds, cacao nibs, pecans, and chocolate chips.
Place 1.5 to 2 tablespoon-sized cookies on a parchment-lined baking sheet.
Bake for 8-10 minutes. They will be delicate and crumbly until they cool and set up.
