Chocolate Pecan Oatmeal Cookies

Ingredients

  • 1 1/2 cups gluten-free rolled oats
  • 2/3 cup almond flour
  • 3 tablespoons ground flax
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 tablespoons melted coconut oil
  • 1/2 cup plain almond butter
  • 1/4 cup coconut sugar
  • 1/4 cup date syrup or maple syrup or agave
  • 1 tablespoon vanilla extract
  • 1/4 cup hemp seeds
  • 1 tablespoon cacao nibs
  • 1/2 cup toasted pecans
  • 1/2 cup keto chocolate chips

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine the first six dry ingredients in a mixing bowl. Stir in all wet ingredients using a spoon or hand mixer to make a dough.

  3. Fold in hemp seeds, cacao nibs, pecans, and chocolate chips.

  4. Place 1.5 to 2 tablespoon-sized cookies on a parchment-lined baking sheet.

  5. Bake for 8-10 minutes. They will be delicate and crumbly until they cool and set up.
