Fall Flavored Muffin

Ingredients

  • 1 cup non-dairy yogurt
  • 1/3 cup coconut sugar
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • pinch of salt
  • 2 cups almond flour
  • 1/2 cup tapioca or corn starch
  • 1/3 cup chocolate chips

Preparation

  1. Whisk together yogurt and coconut sugar

  2. Add baking powder, vanilla, salt, starch, and flour

  3. Mix to combine

  4. Fold in the chocolate chips

  5. Scoop into six muffins, filling each almost to the top, and gently smooth the tops

  6. Bake for 30 minutes at 350F or until golden brown and firm to the touch when you lightly press the center

  7. Cool then enjoy
