Gluten Free Vegan Orange Scones

Ingredients

  • 1 1/4 cup gluten free all purpose flour
  • 3/4 cup almond flour
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1 flax egg {1 tbsp. flaxseed meal + 2.5 tbsp. water}
  • 1 tbsp. orange zest
  • 1/4 cup fresh orange juice
  • 1/4 cup @foragerproject Plant Based Buttery Spread {melted}

Preparation

  1. Preheat oven to 350F and spray/line a baking pan.

  2. In a small bowl, stir together the flax egg ingredients & set aside for 5 minutes.

  3. In a large sized bowl, whisk together the flours, sugar, & baking powder.

  4. In a small bowl, whisk together the flax egg, orange zest, orange juice, & melted butter.

  5. Pour the wet ingredients into the dry and stir until combined—using your hands at the end to roll the dough into a ball.

  6. Place the dough onto the baking sheet, flatten into a circle {about 1/4 inch thick}, and cut into 8 scones.

  7. Bake for 10 minutes & let cool for at least 5 minutes before separating the slices + topping with icing!
