Cranberry Orange Muffins with Macadamia Nuts
Ingredients
- 1/4 cup fresh orange juice
- 1/4 cup almond milk
- 2 eggs
- 1/2 cup coconut sugar
- 1 cup Bob's Red Mill 1:1 gluten-free flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 cup dried cranberries
- 1/2 cup macadamia nuts
Glaze
- vanilla protein powder
- honey
- almond milk
- sprinkles
Preparation
Preheat oven to 350F and spray or line a muffin tin
In a small bowl, whisk together the wet ingredients
In a large bowl, whisk together the dry ingredients and stir in the cranberries and macadamia nuts
Pour the wet ingredients into the dry and stir until well combined
Scoop batter into a muffin tin about halfway full, this makes 10 muffins and bake for 18 minutes
Glaze
Mix vanilla protein powder, honey, and almond milk to make a glaze
Drizzle the glaze over the baked muffins and add sprinkles
