Cranberry Orange Muffins with Macadamia Nuts

Ingredients

  • 1/4 cup fresh orange juice
  • 1/4 cup almond milk
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1 cup Bob's Red Mill 1:1 gluten-free flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 cup dried cranberries
  • 1/2 cup macadamia nuts

Glaze

  • vanilla protein powder
  • honey
  • almond milk
  • sprinkles

Preparation

  1. Preheat oven to 350F and spray or line a muffin tin

  2. In a small bowl, whisk together the wet ingredients

  3. In a large bowl, whisk together the dry ingredients and stir in the cranberries and macadamia nuts

  4. Pour the wet ingredients into the dry and stir until well combined

  5. Scoop batter into a muffin tin about halfway full, this makes 10 muffins and bake for 18 minutes

Glaze

  1. Mix vanilla protein powder, honey, and almond milk to make a glaze

  2. Drizzle the glaze over the baked muffins and add sprinkles
