Healthy Vegan Gluten-Free Chocolate Orange Scones

Ingredients

  • 2 1/2 cups gluten-free oat flour
  • 1/2 to 3/4 cup coconut sugar or stevia
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • heaping 1/3 cup mini vegan chocolate chips or cacao nibs
  • 1/2 cup cold vegan butter (we love naturli!)
  • 1 cup fresh orange juice
  • 1/4 cup vegan Greek-style yogurt or soy yogurt

Preparation

  1. Begin by combining your flour, sugar, baking powder and salt in a large bowl. Cut your butter up and begin to mix it in until the mixture resembles cornmeal.

  2. In a separate bowl, mix together your orange juice and soy yogurt, and slowly mix into your large bowl until a dough is formed. Fold in your chocolate chips now too!

  3. Chill your dough for 1 hour.

  4. Preheat the oven to 350F, and lightly oil your skillet. Press the dough into the skillet evenly until filled, and cut your soon-to-be scones into 9 slices.

  5. Bake these beauties for 30-35 minutes or until golden brown, and enjoy!
