Vegan Chocolate Halloween Cupcakes
Ingredients
- 1 1/4 cups all purpose flour or a flour blend of your choice
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup coconut milk
- 1/2 cup water
- 1 cup date sugar
- 1/3 cup coconut oil
- 1 teaspoon pure vanilla extract
Frosting
- 1 teaspoon vanilla extract
- A few dark chocolate chips
- Coconut whipped cream (adjust amount to your needs)
Preparation
Preheat oven to 180°C. Line cupcake pans with paper cupcake liners.
Mix together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, stir together coconut milk and water until slightly curdled. Add sugar, oil, and vanilla extract. Slowly whisk in the flour mixture and mix for 1 minute until combined.
Pour batter into the prepared cupcake pan. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean.
Place cupcakes on a cooling rack and cool completely.
Frosting
Beat the coconut whipped cream along with the vanilla extract for 1 minute until fluffy, or spread it on top if it already has the desired consistency.
Add the dark chocolate chips as eyes on the cupcakes.
