Vegan Chocolate Halloween Cupcakes

Ingredients

  • 1 1/4 cups all purpose flour or a flour blend of your choice
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1 cup date sugar
  • 1/3 cup coconut oil
  • 1 teaspoon pure vanilla extract

Frosting

  • 1 teaspoon vanilla extract
  • A few dark chocolate chips
  • Coconut whipped cream (adjust amount to your needs)

Preparation

  1. Preheat oven to 180°C. Line cupcake pans with paper cupcake liners.

  2. Mix together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

  3. In a large mixing bowl, stir together coconut milk and water until slightly curdled. Add sugar, oil, and vanilla extract. Slowly whisk in the flour mixture and mix for 1 minute until combined.

  4. Pour batter into the prepared cupcake pan. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean.

  5. Place cupcakes on a cooling rack and cool completely.

Frosting

  1. Beat the coconut whipped cream along with the vanilla extract for 1 minute until fluffy, or spread it on top if it already has the desired consistency.

  2. Add the dark chocolate chips as eyes on the cupcakes.
