Vegan Ghost Cupcakes for Halloween
Ingredients
- 1 1/4 cups all-purpose flour or flour blend
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup coconut milk
- 1/2 cup water
- 1 cup date sugar
- 1/3 cup coconut oil
- 1 teaspoon pure vanilla extract
Frosting
- 1 teaspoon vanilla extract
- A few dark chocolate chips
- Coconut whipped cream (adjust amount to needs)
Preparation
Preheat oven to 180°C and line cupcake pans with paper cupcake liners.
Combine flour, cocoa powder, baking powder, baking soda, and salt in a bowl and set aside.
In a large mixing bowl, stir together coconut milk and water until slightly curdled, then add sugar, oil, and vanilla extract.
Slowly whisk in the flour mixture and mix for 1 minute until combined.
Pour batter into the prepared cupcake pan and bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean.
Place cupcakes on a cooling rack and allow them to cool completely.
For frosting, beat the coconut whipped cream with vanilla extract for 1 minute until fluffy, or pour it on top if it already has the desired consistency, then add chocolate chips as eyes for the ghosts.
