Vegan Ghost Cupcakes for Halloween

Ingredients

  • 1 1/4 cups all-purpose flour or flour blend
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1 cup date sugar
  • 1/3 cup coconut oil
  • 1 teaspoon pure vanilla extract

Frosting

  • 1 teaspoon vanilla extract
  • A few dark chocolate chips
  • Coconut whipped cream (adjust amount to needs)

Preparation

  1. Preheat oven to 180°C and line cupcake pans with paper cupcake liners.

  2. Combine flour, cocoa powder, baking powder, baking soda, and salt in a bowl and set aside.

  3. In a large mixing bowl, stir together coconut milk and water until slightly curdled, then add sugar, oil, and vanilla extract.

  4. Slowly whisk in the flour mixture and mix for 1 minute until combined.

  5. Pour batter into the prepared cupcake pan and bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean.

  6. Place cupcakes on a cooling rack and allow them to cool completely.

  7. For frosting, beat the coconut whipped cream with vanilla extract for 1 minute until fluffy, or pour it on top if it already has the desired consistency, then add chocolate chips as eyes for the ghosts.
