Instant Pot Cabbage Soup
Ingredients
- 2-3 carrots
- 4-5 celery stalks
- 1 white onion
- 1 tablespoon olive oil
- 1/2 purple cabbage
- 1 can white beans (rinsed and drained)
- 1 can diced tomatoes
- 1 1/2 teaspoons minced garlic
- 3 cups veggie broth
- Salt
- Chili powder
- Parsley
- Thyme
Preparation
Add olive oil, carrots, celery, garlic, and onion to the Instant Pot and use the sauté setting for about 5 minutes, stirring often.
Add beans, tomatoes, cabbage, veggie broth, and spices then stir and set to pressure cook on high for 6 minutes.
After pressure cooking, release the pressure, top with fresh parsley, avocado, or anything crispy, and serve with warm bread.
