Gluten-Free Berry Vegan Cheesecake

Ingredients

  • 2 1/2 cups raw cashews or macadamias
  • 3 Tbsp @unicornsuperfoods berrylicious blend
  • 1 Tsp vanilla pods
  • 1 1/4 cup liquid sweetener such as stevia
  • 1/2 cup water
  • 1/3 cup raw coconut oil

Base

  • 1 1/2 cup shredded coconut
  • 1 cup golden raisins
  • 1 Tbsp @unicornsuperfoods berrylicious blend
  • 2 Tbsp raw coconut oil
  • 3 Tbsp water (or until doughy)

Preparation

  1. In a food processor, put all the ingredients for the base and add water little by little until it becomes doughy.

  2. Form the base of the cake and place it in the freezer.

  3. Meanwhile, blend all the filling ingredients except vanilla and berrylicious blend.

  4. Divide the cream into two equal parts and add the vanilla and berrylicious blend separately to each part.

  5. Add the mixture spoon by spoon on top of the base to create a layered pattern.

  6. Let it freeze overnight.

  7. Then, place it in the fridge for at least 6 hours before eating.
