Creamy Cashew Sweet Dip for Fruit Tarts

Ingredients

  • 1 cup raw cashews, preferably soaked 2 to 3 hours
  • 4 – 5 medjool dates
  • 2 tsp vanilla extract
  • 3/4 – 1 + 1/4 cup water (185 – 310ml)

Preparation

  1. Combine all ingredients, starting with only 3/4 cup water, and blend until creamy smooth, pausing occasionally to scrape down the sides.

  2. Gradually add additional water, 1 or 2 tablespoons at a time, until achieving the desired consistency. If the mixture becomes too watery, incorporate a few more cashews and blend.

  3. Taste for flavor, and add extra dates if you prefer a sweeter taste.
