Taco Salad with Cilantro Yogurt Dressing

Ingredients

  • romaine lettuce
  • 1 cup tomatoes
  • 1 red onion
  • 1 cup cheese
  • 1 lime
  • 1 cup corn

Meat

  • 1 lb ground beef
  • 1 packet of taco seasoning

Dressing

  • 1/2 cup cilantro, packed
  • 1/2 cup plain Greek yogurt
  • Juice of 2 limes
  • 1 tsp honey
  • 1/2 teaspoon kosher salt
  • 1 tsp garlic powder
  • 1/4 cup extra-virgin olive oil

Preparation

  1. Heat a pan over medium heat

  2. Add the ground beef and seasoning

  3. Sauté until the meat is browned, about 5-7 minutes

  4. Drain the grease off

  5. While the meat cooks, combine all of the dressing ingredients in a food processor and blend

  6. Chop the vegetables for the salad in a food processor

  7. Assemble the salads in 4 containers, keeping the meat separate for heating
