Apple Cinnamon Fig Muffins

Ingredients

  • 2 large Granny Smith apples, cut into 1cm pieces
  • 100g dried figs diced
  • 1 tsp baking soda
  • 1/2 cup boiling water
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/3 cup coconut yoghurt
  • 1 3/4 cups wholemeal spelt flour
  • 1/4 cup coconut sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1/3 cup melted coconut oil

Preparation

  1. Preheat oven to 180C. Grease and prepare a 12 cup muffin tin.

  2. Combine the apple, dates and bicarb in a large bowl. Pour over boiling water. Set aside, stirring occasionally, for about 10 minutes to cool and soften.

  3. Whisk the eggs, syrup, yoghurt and sugar.

  4. Combine the flour, baking powder, cinnamon, nutmeg and salt in a large bowl. Make a well in the centre. Add egg mixture and oil. Stir until just starting to come together.

  5. Blitz the apple and fig mixture in a food processor to form a course consistency. Don’t over process, you don’t want purée. Stir in the apple mixture until just combined.

  6. Pour into prepared muffin tin and bake for 20-25 minutes or until a skewer inserted into the centre comes out clean.
