Naartjie Banana Coconut Muffins

Ingredients

  • 2 cups spelt flour
  • 1/2 cup coconut sugar
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • 4 Tbsp coconut oil
  • 1 overripe banana
  • 1 tsp vanilla essence
  • 3/4 cup almond milk
  • 2 eggs
  • 1/4 cup naartjie juice
  • 1 Tbsp naartjie zest
  • 1 cup shredded coconut

Preparation

  1. Preheat oven to 180C and line a large muffin pan.

  2. In a large bowl whisk together flour, sugar, salt, and baking powder. Set aside.

  3. Using a separate large bowl mix together mashed banana, eggs, naartjie juice, vanilla, and coconut oil.

  4. Pour the wet ingredients into the dry ingredients. Stir with hand whisk until combined.

  5. Fold in shredded coconut.

  6. Fill each muffin pan 3/4 full with batter. Sprinkle top of batter with sugar before placing in the oven.

  7. Bake for 15 minutes or until tops spring back when touched with fingertip.

  8. Place muffin tin on cooling rack for 5 minutes then gently lift each muffin from pan.
