Buffalo Chicken Stuffed Potatoes

Ingredients

  • 2 russet potatoes
  • 1 cup shredded buffalo chicken
  • 3 tbsp plain Greek yogurt
  • 1 1/2 tbsp green onion, chopped
  • 1/4 cup red onion
  • Avocado oil
  • Sea salt

Toppings

  • Buffalo sauce
  • Green onion
  • Red pepper flakes
  • Gorgonzola cheese

Preparation

  1. Preheat the oven to 400 degrees. Completely wash the potatoes and poke small holes on the outside. Coat with avocado oil and a little sea salt. Bake for 55 minutes to an hour, depending on the size of the potato.

  2. Prepare the buffalo chicken mixture by combining shredded buffalo chicken, plain Greek yogurt, red onion, and green onion.

  3. Once the potatoes are baked, cut them in half and place the mixture inside.

  4. Top with more green onion, red pepper flakes, Gorgonzola cheese, and a drizzle of buffalo sauce. Enjoy.
