Crispy Baked Potato Thins

Ingredients

  • 3 medium russet potatoes
  • 1 tsp salt & pepper
  • 1/2 tsp garlic powder, paprika & option to add a sprinkle of cayenne
  • 1/2 cup shredded cheddar
  • 5 bacon strips cooked
  • 1/4 cup diced green onion

Preparation

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Slice potatoes into rounds.

  3. Toss with oil and spices.

  4. Spread apart on a lined baking sheet and bake for 30 minutes.

  5. Flip and bake another 20 minutes until slightly crispy.

  6. Shred cheese, crumble bacon and chop green onion.

  7. Top potato thins with cheese and bacon.

  8. Broil for 2 minutes.

  9. Garnish with green onion.

  10. Serve with Greek yogurt and hot sauce.
