Creamy Pasta Sauce Without Cream

Ingredients

  • 2 shallots
  • 1 yellow pepper
  • 2 red peppers
  • 1 red chilli
  • 3 cloves garlic
  • 1/2 cauliflower
  • Drizzle olive oil
  • 1 tbsp smoked paprika
  • Salt and pepper
  • 1 tsp dried sage
  • 3 tbsp nutritional yeast
  • 2 portions pasta
  • Fresh herbs to top

Preparation

  1. Preheat the oven to 180°C

  2. In an oven proof dish, add all of the chopped veggies, drizzle over olive oil, salt and pepper, smoked paprika and sage and toss until coated

  3. Pop in the oven for 35 minutes

  4. Just before the veggies are roasted, add the pasta to a pot of bubbling salted water and cook until al dente

  5. Save a ladle of the pasta water to add to the sauce

  6. Blend the roasted veggies with the nutritional yeast and the pasta water

  7. Drain the rest of the pasta then add the sauce, garnish with chilli flakes, more pepper and fresh herbs
