Crispy Garlic Herb Fries
Ingredients
- 8-10 small new potatoes
- 2-3 tbsp olive oil
- 2-3 tbsp mixed chopped herbs like basil + oregano
- 1-2 cloves of garlic minced
- Salt and pepper
Preparation
Preheat oven to 200°C.
Slice the potatoes in half, then each half into 4 pieces and lay them evenly on a lined baking sheet, facing up if possible. Ensure the fries do not touch each other to achieve extra crispiness.
Mix the oil with the garlic, season with salt and pepper, drizzle over the potatoes, toss well, and bake for 20-25 minutes or until golden.
Remove from the oven, sprinkle on the herbs, and serve with vegan tzatziki.
