Easy Vegan Bolognese Quiche
Ingredients
Crust
- 100 g oat flour
- 75 g almond flour
- 30 g buckwheat flour
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 3 tablespoons coconut oil
- 3 tablespoons tahini
- 4 tablespoons cold water
Filling
- 400 g tofu
- 1 onion
- 3 cloves garlic
- 1 teaspoon oregano
- 1 tablespoon soy sauce or tamari
- 2 tablespoons oat milk
- 3 tablespoons olive oil
- pepper and salt to taste
- 1 pack vegan mince from @boonbonen
- 1 large carrot
- 2 tablespoons tomato puree
- handful of cherry tomatoes
Preparation
Preheat the oven to 180 degrees Celsius.
Mix all ingredients for the crust in a large bowl.
Grease a 20 cm springform pan with some coconut oil and spread the mixture over the pan.
Press it down firmly.
Place the pan in the oven and bake the crust for 10 minutes.
Meanwhile, make the filling: sauté the onion, garlic, carrot, and mince with the herbs and soy sauce.
Put the tofu, tomato puree, oat milk, and extra herbs in a blender.
Then add the tofu mixture to the vegetables and mix it together.
Spread the filling over the crust and distribute the cherry tomatoes over the filling.
Bake the quiche for 45 minutes.
Let it cool for 10 minutes.
