Baked Potatoes with Pizzaiola Sauce

Ingredients

  • 600g potatoes
  • 400ml tomato puree
  • 125g mozzarella
  • 3 tablespoons grated Parmesan cheese
  • 1 garlic clove
  • a few basil leaves
  • dried oregano
  • olive oil
  • salt
  • pepper

Preparation

  1. Preheat the oven to 180°C.

  2. Peel and slice the potatoes into even rounds.

  3. In a saucepan, heat olive oil and sauté the garlic until fragrant.

  4. Add the tomato puree, dried oregano, salt, and pepper; simmer for about 10 minutes to make the sauce.

  5. In a baking dish, layer the potato slices and pour over the tomato sauce mixture.

  6. Sprinkle the mozzarella and Parmesan cheese on top.

  7. Bake for 30-40 minutes until the potatoes are tender and the top is golden and bubbly.

  8. Garnish with fresh basil leaves before serving.
