Baked Potatoes with Pizzaiola Sauce
Ingredients
- 600g potatoes
- 400ml tomato puree
- 125g mozzarella
- 3 tablespoons grated Parmesan cheese
- 1 garlic clove
- a few basil leaves
- dried oregano
- olive oil
- salt
- pepper
Preparation
Preheat the oven to 180°C.
Peel and slice the potatoes into even rounds.
In a saucepan, heat olive oil and sauté the garlic until fragrant.
Add the tomato puree, dried oregano, salt, and pepper; simmer for about 10 minutes to make the sauce.
In a baking dish, layer the potato slices and pour over the tomato sauce mixture.
Sprinkle the mozzarella and Parmesan cheese on top.
Bake for 30-40 minutes until the potatoes are tender and the top is golden and bubbly.
Garnish with fresh basil leaves before serving.
