Cheesy Smashed Potatoes with Garlic and Pesto
Ingredients
- 5 medium potatoes
- 1 tablespoon olive oil
- 2 garlic cloves
- 1 cup shredded cheese
- 1/2 cup pesto
For serving
- sour cream
- fresh parsley
Preparation
Boil potatoes with skin on for 40 minutes or until tender.
Preheat oven to 180C and line a baking tray with parchment paper.
Drain potatoes and let them dry.
Arrange on the prepared baking tray and smash potatoes using a potato masher.
Combine olive oil and garlic in a small bowl.
Drizzle potatoes with oil and sprinkle with cheese.
Bake for 25 minutes or until the potatoes are crispy and the cheese has melted.
Serve with pesto and sour cream.
