Garlic Potatoes with Spinach and Mushrooms

Ingredients

  • 1 tablespoon oil
  • 3 cups sliced mushrooms
  • 2 garlic cloves, minced
  • 4 cooked potatoes, peeled and cubed
  • 3 cups baby spinach
  • crushed rosemary
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • fresh parsley, for garnishing

Preparation

  1. Heat oil in a frying pan over medium heat, add mushrooms and garlic. Cook for 10 minutes until mushrooms are golden brown.

  2. Add potatoes, spinach, and spices, season to taste.

  3. Cook for another few minutes until potatoes are cooked through and slightly crispy.

  4. Serve warm garnished with fresh parsley and enjoy.
