Garlic Potatoes with Spinach and Mushrooms

Ingredients

  • 1 tablespoon oil
  • 3 cups sliced mushrooms
  • 2 garlic cloves, minced
  • 4 cooked potatoes, peeled and cubed
  • 3 cups baby spinach
  • crushed rosemary
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • fresh parsley, for garnishing

Preparation

  1. Heat oil in a frying pan over medium heat, add mushrooms and garlic.

  2. Cook for 10 minutes until mushrooms are golden brown.

  3. Add potatoes, spinach, and spices; season to taste.

  4. Cook for another few minutes until potatoes are cooked through and slightly crispy.

  5. Serve warm garnished with fresh parsley.
