Garlic Potatoes with Spinach and Mushrooms
Ingredients
- 1 tablespoon oil
- 3 cups sliced mushrooms
- 2 garlic cloves, minced
- 4 cooked potatoes, peeled and cubed
- 3 cups baby spinach
- crushed rosemary
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- fresh parsley, for garnishing
Preparation
Heat oil in a frying pan over medium heat, add mushrooms and garlic.
Cook for 10 minutes until mushrooms are golden brown.
Add potatoes, spinach, and spices; season to taste.
Cook for another few minutes until potatoes are cooked through and slightly crispy.
Serve warm garnished with fresh parsley.
