Hearty Healthy Vegan Lentil Loaf
Ingredients
- 1 carrot, chopped
- 2 stalks of celery, chopped
- 1/2 red onion, chopped
- 1 garlic clove
- 1/2 cup veggie broth
- 2 cups cooked french lentils
- 1 tsp tamari
- 1 tsp vegan worchestershire sauce
- 1 tsp salt
- 1/2 tbsp thyme
- 1/2 tbsp cumin
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1 tsp crushed red pepper flakes
- 1 cup rolled oats
- 1/2 cup brown rice flour
- 1/3 cup water
- 3 tbsp flax meal
- 1 tbsp Sriracha
- 2 tbsp maple syrup
- 2 tbsp balsamic vinegar
Preparation
Sauté the carrot, celery, onion, and garlic in veggie broth.
Add lentils, tamari, vegan worchestershire sauce, and the spice blend (salt, thyme, cumin, onion powder, garlic powder, crushed red pepper flakes) to the sauté.
Make the flax egg by mixing 1/3 cup water with 3 tbsp flax meal and let it sit for 10 minutes.
Prepare the lentil mix by combining 1 cup rolled oats, 1/2 cup brown rice flour, and the flax egg.
Combine the sautéed mixture with the lentil mix to form the lentil loaf.
Prepare the glaze by mixing 1 tbsp Sriracha, 2 tbsp maple syrup, and 2 tbsp balsamic vinegar, then apply it on top of the lentil loaf.
Bake at 350 degrees F for 30-40 minutes.
Remove from the oven and let cool before cutting.
