Vegan Nourish Bowl with Roasted Vegetables
Ingredients
- 2 potatoes
- Half a cauliflower
- 1/4 small pumpkin
- Olive oil
- Mixed herbs
- Paprika
- Onion powder
- Garlic powder
- Salt
- Pepper
- Cumin
- Curry powder
- Sesame oil
- Miso paste
- Broccolini
- Corn
- Black beans
- Cucumber
- Avocado
- Handful of greens (e.g., rocket or arugula)
- Balsamic reduction
- Optional vegetables of choice
Preparation
Preheat your oven to 200°C.
Peel and dice 2 potatoes and coat with olive oil, mixed herbs, paprika, onion powder, garlic powder, salt, and pepper. Evenly spread out onto a lined baking tray.
Cut half a cauliflower into florets and coat in olive oil, paprika, cumin, onion powder, garlic powder, curry powder, salt, and pepper. Add to the tray.
Cut 1/4 small pumpkin into thick slices and coat with a mixture of sesame oil and miso paste. Add to the tray and place everything in the oven.
At the 30-minute mark or when the cauliflower is golden, remove it from the oven. Allow the pumpkin and potatoes to cook for a total of 50-55 minutes or until golden.
While the vegetables are baking, prepare any other vegetables of your choice. For example, blanch broccolini, fry corn and black beans, and cut up cucumber and avocado.
Assemble your bowl by placing a handful of greens in the bottom, followed by the roasted and prepared ingredients. Serve with a balsamic reduction.
