Vegetarian Wellington for New Year's

Ingredients

  • Beyond Meat mince
  • Meatless Farm plant-based steaks
  • Vegan black pudding
  • Button mushrooms
  • Marmite with truffle flavor
  • Pastrami style slices
  • Puff pastry
  • Parsnips
  • Carrots
  • Potatoes
  • Bisto beef flavour gravy mix
  • Broccoli
  • Sprouts

Preparation

  1. Shape the Beyond Meat mince into a log.

  2. Wrap the mince log with squished Meatless Farm plant-based steaks.

  3. Prepare duxelles by mixing and frying vegan black pudding, button mushrooms, and marmite with truffle flavor until cooked.

  4. Wrap the duxelles around the log, then add pastrami style slices.

  5. Encase the entire assembly in puff pastry.

  6. Bake the Wellington at 180°C for 40 minutes.

  7. Roast parsnips, carrots, and potatoes in the oven until tender.

  8. Mash the potatoes after boiling them.

  9. Cook mini Yorkshire puddings according to standard preparation.

  10. Steam or boil broccoli and sprouts until softened.

  11. Prepare gravy using the Bisto mix as directed.
