Crispy and Fluffy Accordion Potatoes
Ingredients
- 4 potatoes, peeled
- 4.5 tablespoons Olivado avocado oil
- 1/2 teaspoon garlic powder
- Seasoning of choice (we used 1 teaspoon peri peri seasoning)
- Salt and pepper
For serving
- Nutritional yeast
Preparation
Preheat oven to 200°C and line a baking tray.
Cut off both ends of each potato lengthways and the tips to square them up.
Slice each potato into approximately 1/4 inch thick slices.
Place a potato slice between two chopsticks, cut horizontal slices along the top, flip over, and cut diagonal slices.
Carefully stretch out the potato slices, repeat with remaining slices, then boil for 5 minutes to soften, drain, and pat dry.
In the meantime, mix the oil with seasoning of choice.
Brush each potato slice with the oil mixture on each side, leaving 1 tablespoon of the mixture for later.
Arrange on the baking tray, sprinkle with salt and pepper, and bake for 20 minutes.
Flip the potatoes and brush with remaining oil mixture if needed, then bake for 10-20 minutes or until golden and crisp.
Sprinkle with nutritional yeast and serve with your favorite dip or salsa.
