Spicy Roasted Potato Hash

Ingredients

Spices

  • Garlic powder, as needed
  • Onion powder, as needed
  • Taco seasoning, as needed
  • Ground cayenne, as needed
  • Smoked paprika, as needed
  • Salt, to taste

Potato components

  • 2 lbs potatoes
  • 1/8 cup oil
  • 1/4 cup corn starch

Preparation

  1. Boil the cubed potatoes in a pot of salted water until they are fork tender

  2. Drain the potatoes and set aside to cool

  3. Preheat oven to 425 degrees Fahrenheit and line a baking sheet, then spread out to a single layer

  4. Drizzle olive oil, sprinkle corn starch, salt, garlic powder, onion powder, taco seasoning, smoked paprika and toss well to combine thoroughly and spread the potatoes evenly in a single layer

  5. Place the baking sheet in the oven and bake for 40 minutes, mixing potatoes halfway through

  6. Remove the potatoes when they are slightly golden brown in color

  7. Serve warm stuffed inside your favorite flat bread with veggies, beans and your favorite sauce
