Baked Chicken Thighs with Balsamic Tomatoes

Ingredients

  • 5-6 chicken thighs
  • salt
  • pepper
  • avocado or olive oil
  • 1/4 cup balsamic vinegar
  • 1 14 oz can crushed tomatoes
  • 1 tbsp garlic
  • 1/4 cup chopped onion

Preparation

  1. Heat a skillet over medium heat.

  2. Preheat oven to 450F.

  3. Sprinkle salt and pepper on 5-6 chicken thighs.

  4. Add a little avocado or olive oil to the heated skillet and add the chicken thighs.

  5. Cook on one side for 5 minutes, then flip and cook for 1 minute.

  6. Add 1/4 cup balsamic vinegar, 1 14 oz can crushed tomatoes, 1/8 cup avocado or olive oil, 1 tbsp garlic, and 1/4 cup chopped onion to the dish and mix around.

  7. Transfer to the oven and bake for 25-30 minutes.

  8. Check the internal temperature to ensure it's done.
