Baked Chicken Thighs with Balsamic Tomatoes
Ingredients
- 5-6 chicken thighs
- salt
- pepper
- avocado or olive oil
- 1/4 cup balsamic vinegar
- 1 14 oz can crushed tomatoes
- 1 tbsp garlic
- 1/4 cup chopped onion
Preparation
Heat a skillet over medium heat.
Preheat oven to 450F.
Sprinkle salt and pepper on 5-6 chicken thighs.
Add a little avocado or olive oil to the heated skillet and add the chicken thighs.
Cook on one side for 5 minutes, then flip and cook for 1 minute.
Add 1/4 cup balsamic vinegar, 1 14 oz can crushed tomatoes, 1/8 cup avocado or olive oil, 1 tbsp garlic, and 1/4 cup chopped onion to the dish and mix around.
Transfer to the oven and bake for 25-30 minutes.
Check the internal temperature to ensure it's done.
