Quick Quinoa Bowl with Maple Mustard Sauce
Ingredients
- quinoa
- roasted beets (pre-cooked)
- roasted frozen broccoli
- edamame
- corn
- cilantro
Sauce
- 1 tablespoon tahini
- 1 dash maple syrup or agave
- 1 teaspoon mustard
- 1 teaspoon garlic powder
- pinch of salt
- 1-2 tablespoons water
Preparation
Cook quinoa for approximately 20 minutes according to package directions.
Use pre-cooked roasted beets or buy them from the store to save time.
Heat the frozen broccoli, edamame, and corn in the microwave until warmed.
In a small bowl, mix together the sauce ingredients: 1 tablespoon tahini, a dash of maple syrup or agave, 1 teaspoon mustard, 1 teaspoon garlic powder, a pinch of salt, and 1-2 tablespoons water.
Assemble the bowl with cooked quinoa, roasted beets, heated vegetables, and cilantro.
Pour the sauce over the bowl and mix well.
