Quick Quinoa Bowl with Maple Mustard Sauce

Ingredients

  • quinoa
  • roasted beets (pre-cooked)
  • roasted frozen broccoli
  • edamame
  • corn
  • cilantro

Sauce

  • 1 tablespoon tahini
  • 1 dash maple syrup or agave
  • 1 teaspoon mustard
  • 1 teaspoon garlic powder
  • pinch of salt
  • 1-2 tablespoons water

Preparation

  1. Cook quinoa for approximately 20 minutes according to package directions.

  2. Use pre-cooked roasted beets or buy them from the store to save time.

  3. Heat the frozen broccoli, edamame, and corn in the microwave until warmed.

  4. In a small bowl, mix together the sauce ingredients: 1 tablespoon tahini, a dash of maple syrup or agave, 1 teaspoon mustard, 1 teaspoon garlic powder, a pinch of salt, and 1-2 tablespoons water.

  5. Assemble the bowl with cooked quinoa, roasted beets, heated vegetables, and cilantro.

  6. Pour the sauce over the bowl and mix well.
