Chickpea and Sweet Potato
Ingredients
- 1 onion, chopped
- 1 large sweet potato, peeled and chopped into small chunks
- 2 garlic cloves
- 2 tins chickpeas, drained and rinsed
- 1 tin chopped tomatoes
- 2 and 1/2 tsp cumin
- 2 tsp garam masala
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp chilli powder
- 1 veg stock cube
- 1 and 1/2 cups rice
- 600ml boiling water + extra just in case
- Black pepper to taste
Preparation
Add the onion to a large pan and fry for two minutes
Add the sweet potato and cook for five minutes
Add the garlic and chickpeas to the pan and fry for another minute
Mix in the rice and spices and leave to fry for a minute whilst you make up the stock
Pour in the stock, stir together, pop a lid on the pan and cook for 25-30 minutes. You may need to add some more water towards the end particularly if the rice isn't quite cooked enough
