Creamy One Pot Pasta with Coconut Milk
Ingredients
- 2tb plant based butter
- 600ml vegetable broth
- 1/2 Leek
- 250g Spaghetti
- 1/2ts chilli
- 1 can coconut milk
- 1 cup mixed veggies of your choice
- (I usually use carrots, paprika, broccoli and cauliflower)
- 1 lime
- Salt, pepper
- 1tb Curcuma
- 3tb soy sauce
- 2tb Curry powder
Preparation
Heat up plantbased butter in a big pot
Chop the leek and add to the pot
Add all other ingredients
cook for about 10-15 minutes (depending on pasta time)
Stir a couple of times in between
Serve with more lime on top
