Creamy One Pot Pasta with Coconut Milk

Ingredients

  • 2tb plant based butter
  • 600ml vegetable broth
  • 1/2 Leek
  • 250g Spaghetti
  • 1/2ts chilli
  • 1 can coconut milk
  • 1 cup mixed veggies of your choice
  • (I usually use carrots, paprika, broccoli and cauliflower)
  • 1 lime
  • Salt, pepper
  • 1tb Curcuma
  • 3tb soy sauce
  • 2tb Curry powder

Preparation

  1. Heat up plantbased butter in a big pot

  2. Chop the leek and add to the pot

  3. Add all other ingredients

  4. cook for about 10-15 minutes (depending on pasta time)

  5. Stir a couple of times in between

  6. Serve with more lime on top
