Easy Cashew Alfredo Pasta
Ingredients
- 1 cup raw cashews
- 1 cup unsweetened nondairy milk
- 1/4 heaped cup nutritional yeast
- 1 tsp dijon mustard
- 1 tsp garlic powder
- 2-3 tbsp chopped onion (or sub for 1/2 tsp onion powder)
- Salt & pepper to taste
Preparation
Soak the cashews for 20-30 minutes in hot water, then drain.
Add all the ingredients to a high-speed blender and blend until smooth.
Add the sauce to your favorite cooked pasta, incorporate some vegetables such as steamed broccoli, peas, and spinach, and top with fresh basil, red pepper flakes, and freshly cracked pepper.

This is a family favorite for easy and quick meals, with a super creamy and tasty sauce created by the author's sister.
