Creamy Roasted Red Pepper Pasta
Ingredients
- 8 oz gluten-free pasta
- 1/4 cup raw cashews
- 1/4 cup water
- 1/2 cup fire-roasted red peppers (from a jar)
- 2 tablespoons nutritional yeast
- juice of 1 small lemon
- 1 garlic clove
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon maple syrup
- crushed red pepper (optional for spice)
Preparation
Cook pasta according to package instructions.
Add the remaining ingredients to a blender and purée until smooth and creamy. Season to taste.
Drain pasta, reserving 1/2 cup pasta water, and return to pot over low heat. Top with sauce, stir to coat, and heat through.
Transfer to serving bowls and garnish with fresh basil if desired.
