Creamy Roasted Red Pepper Pasta

Ingredients

  • 8 oz gluten-free pasta
  • 1/4 cup raw cashews
  • 1/4 cup water
  • 1/2 cup fire-roasted red peppers (from a jar)
  • 2 tablespoons nutritional yeast
  • juice of 1 small lemon
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon maple syrup
  • crushed red pepper (optional for spice)

Preparation

  1. Cook pasta according to package instructions.

  2. Add the remaining ingredients to a blender and purée until smooth and creamy. Season to taste.

  3. Drain pasta, reserving 1/2 cup pasta water, and return to pot over low heat. Top with sauce, stir to coat, and heat through.

  4. Transfer to serving bowls and garnish with fresh basil if desired.
