Fusilli with an Easy Tomato-Mushroom Sauce and Garlicky Breadcrumbs
Ingredients
- 500g pasta
- olive oil
- 2 cups of breadcrumbs
- 2 + 3 cloves of garlic, minced
- 1 small onion, finely chopped in the food processor
- 250g mushrooms, finely chopped in the food processor
- 5 tbsp. tomato paste
- 2 1/2 tsp. sugar
- 1 tbsp. dried oregano
- salt
- 1 tsp. chili flakes
Preparation
Bring a pot with water to a boil and cook the pasta according to the package instructions
Meanwhile heat 2 tbsp. olive oil in a non-stick pan over medium heat
Add the 2 minced garlic cloves and fry them in the oil for about 1 minute. Then, add the breadcrumbs to the pan and fry them for about 2-3 minutes, stirring occasionally, until they're golden
Transfer the breadcrumbs to a bowl and heat another 3 tbsp. of olive oil in the pan
Add the finely chopped onion and cook it for 1 minute, before adding the other 3 cloves of minced garlic and the finely chopped mushrooms
Cook everything for about 2 minutes or until the mushrooms are very soft
Add tomato paste, sugar, dried oregano, some salt, chili flakes and about 2 cups of hot pasta water
Give everything a good stir and let the sauce thicken for about 1-2 minutes
Drain the pasta and add it to the sauce with your breadcrumbs
Mix everything very well and add more salt and / or olive oil if needed
