Greedy Breakfast Bap

Ingredients

  • one block of firm tofu, sliced thinly
  • 50ml almond / oat / soya milk
  • 1/2 tsp turmeric
  • 2 tbsp nutritional yeast
  • 1/2 tsp smoked paprika
  • 1/4 tsp black salt (optional)
  • 1/2 tbsp tamari
  • salt and pepper to taste
  • soft white bap
  • spinach
  • sautéed tamari mushrooms
  • sundried tomatoes

Preparation

  1. Whisk the almond milk, turmeric, nutritional yeast, paprika and black salt/ tamari together in a small bowl

  2. In a frying pan in a medium heat, add the eggy mix and slices of tofu. Add the eggy mix and stir/food gently until most of the liquid is absorbed

  3. Layer up your bap with spinach, mushrooms, scramble and tomatoes
