Leftover Ham and Pineapple Fried Rice
Ingredients
- 2 cups jasmine rice
- 3 cups water
- 1/2 tsp salt
- 3 cups ham
- 3 tbs olive oil
- 1 cup pineapple
- 1.5 cup petite green peas
- 1.5 cup bean sprouts
- 2 medium carrots
- 1 medium yellow onion
- 4 stalks green onions
- 3 tbs soy sauce
- 1 tbs rice vinegar
- 1 tbs sesame oil
- 2 garlic cloves
- 2 tsp fresh ginger, grated
- Black pepper, to taste
Preparation
Add rice, water, and salt to a rice cooker, cook it, and spread it out to cool off.
Chop and saute onions, carrots, and ham in olive oil until golden.
Add peas to the center of the pan and cook for a few minutes.
Add more oil, crush garlic, grate ginger, and cook for about a minute.
Add pineapple and bean sprouts, and cook until softened.
Add the cooled rice and stir to combine.
Season with soy sauce, rice vinegar, sesame oil, green onions, and black pepper.
Serving suggestions
Optionally serve in a carved pineapple and enjoy.
